Marinated herring sour-sweet
One of the untypical dishes receipe is presented by chef from Mercato restaurant - Paweł Stawicki.
- root spices
- white wine
Angel wings of sunchoke
Grate the sunchoke and deep fry.
Cut onions should be simmered till soft on white wine with root spices. Leave to cool down and blend into homogenous mass.
Prepare homemade mayo on the base of oil and tarragon
Apples should be marinated in honey, lemon and chamomile. Place in a vacuum sack. Cleaned parsley should be dried in the temperature of 52˚C. Mix with addition of dried chamomile. Take the herring from the marinade and soak it in onion syrup for 5-9 minutes just before serving
Put the dish on the plate starting with angel wings through herring and onion jam. At the end add marinated apple and homemade mayo. All should be covered with parsley and chamomile powder
