  • Sirloin – 0.15 kg
  • Raspberry tomatoes – 0.15 kg
  • Mozzarella di Bufala – 1 piece (0.15 kg)
  • Spinach – 0.02 kg
  • Salt – to taste
  • Pepper – to taste
  • Flour – 0.1 kg
  • Extra virgin olive oil – 0.1 l
  • Yeast – 0.004 kg
  • Warm water – 0.07 l
  • Sugar – 0.001 kg
  • Rosemary – sprig


Take the already cleaned sirloin out of the fridge, and allow it to reach room temperature. In the meantime prepare the focaccia as follows. Mix the liquid ingredients (olive oil and water) with the yeast and sugar. Wait until the sugar has dissolved and the yeast started to swell. After 15 minutes mix the flour, salt and rosemary into the resulting leaven to make the focaccia dough. Knead the dough until its texture becomes homogenous, then place on a tin greased with olive oil and put into an oven pre-heated to 200°C. Bake for 35 minutes, leave to cool and then cut into two 1.5 cm thick slices. Lay slices of Mozzarella di Bufala and tomatoes alternately onto one slice of focaccia, and drizzle the other slice with olive oil. Put the slices into an oven pre-heated to 200°C, until the mozzarella turns golden and melts. In the meantime, fry the whole sirloin until medium-rare. Make a sandwich of the result by using the slice of focaccia with the olive oil as the base layer, add the spinach, sirloin and finally top with the focaccia slice with the mozzarella and tomatoes. Drizzle with olive oil and balsamic vinegar.
