HERBAL SOUP - wash the greens, dry and chop them finely, remove the petioles from the sorrel leaves. Melt the butter in a pot, add all the greens to it and bring to the boil. Pour in the broth and bring to a boil. Add the yolks mixed with flour and a little water or broth to the stock. Add the mixture slowly, stirring vigorously. We heat it up, but do not boil it anymore, the soup should be slightly thick. We serve the dish warm and serve it with a poached egg.
