According to the owners, the first two restaurants were located in Torun, but demand soon grew for places such as these, and the chain gained enormous popularity. An important contributor was their home-made lard, which has been served to guests since the very beginning. Served with the best additions possible, that is, gherkins and home-made bread, it has become an integral part of the menu for the unique flavours that it offers.
The lard is rendered from fresh pork fat and smoked bacon with the addition of fresh apples and onions, and spices such as marjoram, thyme, salt and pepper lend it a very distinct taste. It is pasteurised using traditional methods and contains no preservatives. What is the best way to serve it? The best way is undoubtedly to spread it on a slice of home-made bread, sprinkle it with freshly-ground black pepper and add some gherkin slices. Some coarse-grained salt is also a good addition.
