Lettuce mix with goat quark and mango sauce
Who says that only drinks can be refreshing? We may equally well cool off with a light meal - an ideal solution especially on a hot summer day! The chef of the MERCURE Gdańsk Stare Miasto Hotel , Łukasz Miecznikowski, comes to help. We present a recipe for a summer salad with goat cheese and mango sauce.
- 1 handful of lettuce (pick your favourite)
- ½ cucumber
- 100 g cherry tomatoes
- 1 red onion
- 1 red bell pepper
- 100 g goat cheese
- 5 g pumpkin seeds
- 1 mango
- 100 ml extra virgin olive oil
- 50 ml orange juice
- 1 tablespoon mustard
- Brown sugar to taste
- 1 bunch coriander
Start by making the sauce.
Peel the mango and combine it with the orange juice and mustard. Blend until the mixture is smooth. While blending, gradually add the olive oil. Then chop and add the coriander, and season to taste.
Dice the other vegetables into large chunks and marinate them in the sauce with a little lemon juice.
Shred the lettuce and put it on a plate or bowl.
Add the vegetables and sprinkle with crushed goat quark.
Garnish the dish with pumpkin seeds.
Add the mango sauce to top it all off.
