Pickled cucumbers are very popular in Poland. Except for great taste, pickles are also healthy. A recipe by Chef of Sheraton Sopot Hotel is a combination of old recipes used in Pomerania with easily accessible ingredients. 

Recipe for 4 people.

Marinated Salmon

  • Fillet of wild salmon or Baltic Sea trout 500g
  • Kashubian honey 15g
  • Water from homemade pickled cucumbers 250ml
  • Juice from one lemon
  • ½ bunch of dill

Ingredients 

  • Shallot 4-5 pieces
  • White wine
  • 1 bunch of thyme
  • Newlyweds: young radishes, spinach, young carrots
  • Rapeseed virgin oil
  • Roe

Preparation

Combine salmon with honey, lemon juice, dill and water with homemade pickled cucumbers. Marinate thin slices of salmon for about 20 minutes. Cook the shallot with a thyme in white wine for 10-12 minutes. Ready fish can be served in the form of a spring salad with newlyweds like young spinach, carrots or radishes and roe, with an addition of rapeseed oil and marinated chanterelles. Serve with homemade bread.
