We are recommending the original Piemonte fondue, based on the recipe provided by the chef of San Marco Ristorante & Pizzeria in Gdansk.


  • 200 g of Fontina cheese
  • 125 g of milk
  • 50 g of butter
  • 2 egg yolks
  • Nutmeg
  • Freshly grated black pepper


  • 1 pepper
  • 1/2 zucchini
  • 1 carrot
  • 1 celery
  • 150 g of Ventricina piccante (a kind of Italian processed meat)
  • 3 slices of country bread


Melt butter with milk in a water bath. When the butter has melted, add the Fontina cheese previously cut into small cubes. Let the cheese melt by continuously stirring the mixture. Then add two egg yolks. Stir for three minutes and, once the consistency of a thick pudding has been obtained, add some freshly grated nutmeg and pepper. Pour the mixture into an iron pot and put it on a stand. Place a heater filled with gel fuel underneath. Cut the vegetables and meat into strips. Grill the bread. Then cut it into thin slices (2-3 cm thick).

Immerse the additions in the mixture and enjoy your meal while it's hot.
