Pumpkin cream soup with ginger and seeds

A warm and nutritious pumpkin cream soup with ginger and seeds is a perfect light dish for autumn evenings. Recommended by Marcin Faliszek, chef from Gdansk Bowke restaurant.
Ingredients (for 4 persons):
- Pumpkin – 500gr
- Onions – 100gr
- Garlic – 30gr
- Fresh chili pepper – 15gr
- Cream (30%) – 300ml
- Fresh ginger – 30gr
- Vegetables broth for cooking – 1.500ml
- Roasted pumpkin seed
- Butter 70gr
- Salt, pepper
Preparation:
Pit and peel pumpkin. Put the pumpkin in an oven at 200 C˚ for about 30 minutes. Onions, garlic and chili should be fried on butter. Add cooked pumpkin and pour broth. Cook till soft, add cream and blend all ingredients till a homogenous mass is created. Add salt and pepper according to your taste and garnish with pumpkin seeds.
