Saddle of lamb
Tasty and traditional! We present the recipe for lamb saddle by chef of the Holiday Inn Hotel Gdańsk - City Center restaurant.
- saddle of lamb
- fresh herbs (thyme, rosemary)
- bread crumbs
- barbecue potato
- oyster mushroom
- red wine
- sour cream
Clean the saddle from membranes, season.
Mix breadcrumbs with butter, salt, herbs and garlic. Combine both pieces of meat. Put on the finished brushwood and rolls. Bake at 200 degrees for 15 minutes.
Grate boiled potatoes using big spots. Fry the shallot, that was previously cut into cubes. Add potatoes to it, season to taste. Place the fried potatoes to a form. Bake in the oven for 10 minutes.
Fry the chopped oyster mushroom in butter, shallot, garlic and thyme. Water with red wine, add a little cream after reduction, reduce and season to taste.
Put the dish together. Put the baked potato "rosti" the center of the plate, put the meat on it, then put mushrooms with sauce around.
